Not a bad place at all if you are into Mexican burritos. The customer staff and service was excellent, the food preparation was surprisingly quick, the family was well maintained, and the location was centrally located in Castle Rock. I highly encourage others to come visit.

If you've never tasted green chile in Colorado, they are an essential stop. They have multiple locations all over Denver. Don't bother with the drive thru, it's always busy. Go inside and go early. The half and half green chile fries are a no brainer. The burritos are divine.

Every time I get take out there’s a problem. Latest time my chicken flautas were really burned. The food can be good, but having lots of bad luck at this location. Here was my lunch today, so burned it doesn’t even look like chicken.

I love Santiago's! But I think the team could use some training on how to roll a burrito. Castle Rock location... Taco-Rito?

Pretty average. Not bad, not stellar. Had the carnitas with green chile. Kinda like hyped up Taco Bell.
