Rolling smoke is an amazing BBQ spot. Their meats are high quality and smoked to perfection. The burnt ends brisket is akin to “fatty brisket” and something that I highly recommend. The meats have a perfect amount of smokey flavor and are very juicy. The sauces are very good as well. Their green chili sauce is the one to get. I’m so glad I randomly found this place on Google Maps. After decades of disappointing BBQ in Colorado, I can finally say there’s a decent shop for BBQ in town. Highly recommend!
I ordered a full rack of ribs and it was thick and tender. Not dried out like some other places I've been to. I love their selection of sauces and the fact that each one has a different flavor. It's not just a variation of the same one. I think our favorite was the green chili barbecue sauce. And the baked beans were actually great as a side. My 2-year-old wouldn't stop eating them
Very impressed by the smokers they have outside and the flavors in both the meats, bbq sauces, and sides. The meat was perfectly smoked and tender. They had a variety of at least 5 sauces to choose from, so it was fun to try them all. And, the sides were seasoned well, runs a bit salty. My only gripe was that the sides were slightly warm and the meat was on the cooler side. Will still come back tho.
Only had the ribs, tots, and mac-n-cheese. The employees were welcoming. Maybe it was an off day for the food. I gave the food three stars. There was not an ability to put 2.5. I have been known to eat a full slab, but it just wasn't tasty. Didn't even eat half. When you go to a place that has bar-ɓ-que on the name, the idea of falling off the bone ribs comes to mind. NOT here. The meat did not want to come off the bone. The pan looked good, but the meat was warm, far from hot. Dry too. Doused in the sauce found at the table, labeled mild and spicy. Still couldn't eat half. Mac-n-cheese - just say no. Where is the cheese? It was dry. The tots were perfectly cooked but then doused in high salt.
Staff was super friendly and helpful. The meat and sauces were very good, and the sides were plentiful. The smell of the smoke brought us in. Compared to the photos in the prior reviews, it looks like the portions have decreased significantly and I’m sure the prices have went up. It was still enough to fill us up, but compared to other BBQ local restaurants for the same prices, there were extremely small. The sides were large, but compared to the photos in prior reviews, I’d say they are also smaller. The baked beans has a brown sugar taste, but nothing special. The potato salad was a bit vinegary for me, but good, and the slaw was a bit salty, but still tasted ok. The meat and daises were good. I really wanted to like this place. The location and friendly staff, and the meat is all good. The value, however is a bit disappointing.
